Laurie’s Recipe of The Week

Laurie’s Cauliflower Soup

1 onion chopped

2 stalks celery chopped

1 head cauliflower broken into floretts

2 large potatoes peeled and cut into quarters

Garlic, salt, pepper

2 cups milk or cream

1/4 Grated cheese, 4 cheese slices, or 2 tbls. Parmesan

Saute onions and celery in pot until soft.  Add cauliflower and potatoes and just cover with water.  Cook until vegetables are falling apart.  Blend all in blender or food processor or use hand blender.  Add milk or cream and cheese and blend again.  Season, blend and taste.  Adjust seasoning to your taste.  Thicken with flour mixed with water if needed but potatoes should make it thick enough.
